A star was born. The first restauranteur to promote wings in the Buffalo telephone book was John M. Young (1935-1988), who opened a restaurant in 1966 called \u201cWings &#038; Things\u201d at 1313 Jefferson Avenue. Young\u2019s wings were uncut, breaded, deep-fried, and served with his secret, tomato-based Mambo Sauce. They were sold ten for a dollar.<\/p>\n<p>We can look even further back than the 1960s for evidence of chicken wings on the plates of Buffalonians. On August 16, 1894, the Buffalo Commercial Advertiser published this less-than-appetizing recipe for chicken wings.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/the_buffalo_commercial_thu__aug_16__1894_.webp?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-24608\" src=\"https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/the_buffalo_commercial_thu__aug_16__1894_.webp?resize=1024%2C626&#038;ssl=1\" alt=\"\" width=\"1024\" height=\"626\" srcset=\"https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/the_buffalo_commercial_thu__aug_16__1894_.webp?w=1024&amp;ssl=1 1024w, https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/the_buffalo_commercial_thu__aug_16__1894_.webp?resize=300%2C183&amp;ssl=1 300w, https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/the_buffalo_commercial_thu__aug_16__1894_.webp?resize=768%2C470&amp;ssl=1 768w\" sizes=\"(max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p>We have no way of knowing if any 19th century Buffalo households had a copy of\u00a0The Modern Cook\u00a0by Charles E. Francatelli (11th edition, 1858), but in it we found this wing recipe, which also sounds fairly unpleasant:<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-24609\" src=\"https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/francatelli.jpg?resize=618%2C379&#038;ssl=1\" alt=\"\" width=\"618\" height=\"379\" srcset=\"https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/francatelli.jpg?w=618&amp;ssl=1 618w, https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/francatelli.jpg?resize=300%2C184&amp;ssl=1 300w\" sizes=\"(max-width: 618px) 100vw, 618px\" \/><\/p>\n<p>We can, however, show that Buffalo\u2019s chicken wing pedigree began at least 160 years ago. In our menu collection is a Bill of Fare dated July 1, 1857, from the Clarendon Hotel at Main &#038; South Division:<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-24610\" src=\"https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/clarendonhotel1857-1.jpg?resize=491%2C1024&#038;ssl=1\" alt=\"\" width=\"491\" height=\"1024\" srcset=\"https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/clarendonhotel1857-1.jpg?resize=491%2C1024&amp;ssl=1 491w, https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/clarendonhotel1857-1.jpg?resize=144%2C300&amp;ssl=1 144w, https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/clarendonhotel1857-1.jpg?resize=736%2C1536&amp;ssl=1 736w, https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/clarendonhotel1857-1.jpg?w=742&amp;ssl=1 742w\" sizes=\"(max-width: 491px) 100vw, 491px\" \/><\/p>\n<p>The wine list was longer than the food list. However, in small print, under Entrees, one finds not only the delightful Macaroni baked, with Cheese, but this offering: Chicken Wings, fried. Buffalo comes by its association with chicken wings honestly.<\/p>\n<p>The Clarendon Hotel, shown here in an illustration from Picture Book of Earlier Buffalo, <img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-24611\" src=\"https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/clarendonhotel.jpg?resize=286%2C359&#038;ssl=1\" alt=\"\" width=\"286\" height=\"359\" srcset=\"https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/clarendonhotel.jpg?w=286&amp;ssl=1 286w, https:\/\/i0.wp.com\/buffalohistory.org\/wp-content\/uploads\/2022\/07\/clarendonhotel.jpg?resize=239%2C300&amp;ssl=1 239w\" sizes=\"(max-width: 286px) 100vw, 286px\" \/> p. 157, was built in 1849 as the Phelps House. Under the new management of Captain Henry Van Allen, it was renamed the Clarendon in 1853 and described as a \u201cfirst class, well kept\u201d hotel. That year, the Buffalo Daily Republic reported, with a cryptic reference to earlier labor difficulties:<\/p>\n<p>At the Clarendon Hotel, girls have been introduced as waiters, with good success. They get from $6 to $8 per month. No other of our principal Hotels has yet tried them. The proprietors think that the employment of girls will alone exempt the Hotels from a repetition of the annoyance already experienced.<\/p>\n<p>Daily Republic, May 3, 1853<br \/>\nAlso in 1853 was this episode of bravery concerning an omnibus, a horse-drawn passenger vehicle:<\/p>\n<p>&#8220;An omnibus, standing at the Clarendon this morning, while the driver was attending to some baggage, started off, and proceeded down Main Street at full speed. When nearly opposite Swan Street a colored man named Jackson started out and caught the lines and stopped the team, amid the applause of several by-standers.&#8221;<\/p>\n<p>Daily Republic, Sept. 3, 1853<br \/>\n&#8220;The Clarendon Hotel served the traveling public and boarders until Nov. 10, 1860, when it was destroyed by fire. At least four guests and two chambermaids lost their lives.
